Our famous scone recipe has become a true crowd favorite — light, buttery, and baked to golden perfection. Scones
3 cups self raising flour
1/4 cup castor sugar
1/4 teaspoon salt
100g butter
3/4 cup plain yogurt
1/4 cup milk or little more as needed
- Add salt to self raising flour
- Rub butter into flour till you get a crumbly mixture.
- Add sugar to the flour mixture
- Combine milk and yogurt and mix well
- Add most of the yogurt/milk mix to the flour mix and combine gently with a fork. Add a little more as needed to make a shaggy dough that just comes together. You may add a little extra milk as needed to get a shaggy dough with no dry bits of flour.
- Do not knead.
- Turn dough out onto a well floured surface and pat down about 1.5cm thick. Cut rounds or any desired shape and place on a baking tray lined with baking paper.
- Brush tops only with milk.
- Bake at 180deg for 12-15min till the tops are lightly brown.
- Remove from the oven and transfer scones to a cooling rack to cool.
For savoury cheese scones:
After step 3, Add 2-3 cups of grated cheddar cheese and 1/4 cup of green herbs (coriander or spring onions) and mix to combine.
Then continue from step 4.
